Open document, language changed to Spanish

Open document, language changed to Spanish
Every time I create a document and save it the next time I open it the language has been changed to spanish instead of english. How do I stop that from happening?

In which format are you Saving?
When you commence a document, is the correct language selected automatically? What language is shown in the middle of the Status Bar (bottom bar of OpenOffice Window)?
